The Cravings Never End…

This morning’s biggest decision as I sat at my desk with a long list of things to do.

Chicken biscuit or bagel?

Seriously. Simple, daily decisions, like what I am going to eat for breakfast, remind me of the little life growing inside of me. Pregnancy cravings, I’ll take them over heartburn and morning sickness every time. But, man, are they getting out of control. When I was pregnant with our first bundle of joy. All I wanted was tacos with lots of hot sauce. My poor husband became an expert at navigating the late night Taco Bell drive-thru crowd. This pregnancy is different when it comes to the cravings  everything. I want all the food. All the time.

The past couple of week the winner has been cheeseburgers, fries and salads. I think I went three days, eating salad for breakfast, lunch and dinner. In spite of these cravings, I attempt to change it up. I mean, I shouldn’t torture my family and make them eat burgers everyday for the next 5 months. So, once again, I hit up Pinterest to look for creative spins on one of my biggest cravings. I found two recipes that I just had to share.

Oh. My. Stepable.com has a recipe for bacon cheeseburger and fries CASSEROLE. I did some digging and I gotta give props to the original creator of this recipe: Kimberly Killebrew over at The Daring Gourmet. Check out this girl’s website. My mouth is watering just looking at her fantastic creations.

Well, now, I’m thinking about lunch… and a trip to the gym.

VMAs 2014: I Must Be Getting Too Old To Understand

The baby went to bed early tonight and the husband is working late with meetings and such, so I ended up browsing channels only to end up watching the 2014 Video Music Awards. Don’t judge me. I’m only a couple of FEW years older than the majority of performers at this year’s MTV’s Video Music Awards, (First of all, MTV barely even shows music videos anymore, but I digress.), but there were just too many times were I was like, “Who are they?, “Why is showing she showing me so much skin?” What does that word even mean?” It was getting kind of hilarious, so I thought I would share them. Maybe (hopefully), some of ya’ll had the same thoughts. Help me not feel like an old fart and say you agree.

1. Ariana Grande played a pretty big part of the show so far. I just can’t get over the fact that she is 21, but looks 13. Seriously, as someone who looks much younger than they really are, I can relate. But, c’mon, she looks really young. Plus, she stars in a Disney Channel show, so I just can’t buy the sexy, sultry, booty-shaking with Nicki Minaj act. #sorrynotsorry

Now, on the other hand, Lorde looks 30 and she is 17. It’s just strange. I was going to say something about her outfit choice, but then I read how she forgot the VMAs were today and just had to grab something. Sounds like something I would do. I’m suddenly a fan.

2. Katy Perry tried to imitate Britney Spears by recreating the iconic denim outfits. Remember 2001, Britney Spears and Justin Timberlake. Yea, Katy Perry copied it with Riff Raff (who the heck is he)? When they first walked up, I thought she had brought Dennis Rodman as her date. Oops. Don’t try to copy Britney. Just don’t.

3. Jim Carrey and Jeff Bridges. Hey, I know who they are! They did a very Dumb and Dumber skit. Then Jim Carrey fell of the stage. I think on accident. Then, kept falling on purpose. Be careful, Jim, you aren’t as young as you used to be…

4. Rob Schneider stars in a new State Farm commercial. Score! I know who he is too!

5.So far, pretty much of all the music performances involved trumpets. Red trumpets. Am I missing a theme here?

There is an hour left… Will I make it?  This preggo needs a water and bathroom break…

6. Whoa. Miley Cyrus. She redeemed herself from last year’s VMA disaster. The guy who accepted an award on her behalf gave a heart wrenching speech about homeless youth. You can go to Miley Cyrus’ Facebook page to learn more about her campaign. Seriously, her status had more than 12,000 likes in one minute.

7. Beyonce cried. I cried. Blue Ivy said “Yay, Mommy.” It was adorable.

With that I called it a night.

I’m BACK with BIG news!!

Well, hello everyone! Remember me? Probably not, but that’s OK. I would love to get reacquainted!!

Anyways, I’m back (I wasn’t really around much). The Freeman family has been pretty busy. I’m beginning to think we feed off pure chaos. Actually, I’m pretty sure we do, because (cue big news!)… we are expecting baby #2! And, thanks to modern medicine, we were able to find out the gender early. They can now do a test on your 10 week blood work that tells the gender. So without further ado, say hello to Baby Freeman #2!

We are beyond thrilled. We can wait to be a family of three!!

Despite adding another child to the mix, I really want to get back into the blogging thing. Writing, sharing and talking with all of “blogger” friends is something I love. It’s like free therapy! 🙂

I’m keeping this post short and sweet, but stick around, I have LOTS more to share with you!!

 

Cauliflower Tortillas

Who doesn’t love tortillas? While they are delicious, they aren’t exactly the healthiest thing. Here at the Freeman house, we have been taking our favorite “not-so-healthy” foods and turning them in to “better-for-you” selections. Yesterday, Jedidiah and I rolled up our sleeves and made a batch of cauliflower tortillas. The deliciousness of tortilla with the nutrition of a vegetable. Count me in. As soon as Jed instagrammed a photo of our dinner, we were bombarded with people wanting the recipe.

We chronicled our cauliflower tortilla experience with Jed’s phone camera. So, I’m apologizing now for the less than dazzling photo quality.

First, clean and prepare your cauliflower. I find it easiest to quarter the head and then cut off the thick stems, leaving you with the florets.

Once you have all of the florets prepped, run them through a food processor to create a rice texture.

Then, cook your cauliflower “rice”. You can steam it in a pot or be lazy like me and cook it in a microwave-safe bowl. Add a quarter cup of water to the bowl and cover with a dish towel. Cook until soft. Once cooked, let the cauliflower cool. Then use a cheese cloth or clean towel to squeeze out the excess water.

Take the drained cauliflower and add 2 large eggs per head of cauliflower. (We prepared 3 heads) Mix together. While mixing, pre-heat oven to 375 degrees.

Spread into tortilla shapes on parchment paper.

Then place in the oven. Cook until golden brown, about 10-15 minutes.

Happy National Pigs-in-a-blanket Day!!!

Well not really. Yesterday was national pigs-in-a-blanket day and I missed it. I really need a calendar for these things! 🙂 So, we are celebrating today.

Who doesn’t love delectable little sausages wrapped in a golden buttery pillow. Breakfast, lunch, dinner, snack… I could eat my weight in those things. I could, but that doesn’t mean I have. While there is no harm in a random indulge every once in a while, one can’t eat these every morning. I know, it was a hard fact for me to accept.

Now, I am always one to find a way to make the unhealthy, healthy. So to celebrate the day, I scoured the web to find a healthy alternative.

Here is a bit of what I’ve found. Pick one and get celebrating!

The Food Network has Hungry’s Girl’s “De-Pudged Pigs in a Blanket” recipe.

These are perfect if you are simply trying to cut down on the calories of the traditional recipe by using low-fat version of ingredients. But, these just simply wouldn’t cut it for someone who is trying to cut out as many processed foods as possible…

Summer, over at The Dirty Floor Diaries, gets it. She created a fantastic paleo recipe. Check it out here.

 So we’ve cut out the processed ingredients but what if you want gluten-free? Well. I’m glad you asked. Nicole over at Gluten Free on a Shoestring has the perfect recipe. Now this recipe looks like the most involved, but if you are making the commitment to go gluten-free, then you will work for the reward of these freshly made morsels.

And of course you know the inevitable results containing unusual recipes. Maybe you want to mix it up? I came across this pretty interesting Buzzfeed article, “19 Audacious Ways To Make Pigs In A Blanket.”

Baby Led Weaning

Baby Led Weaning. I’ve heard that term a hundred time since I was pregnant. Now that the princess is starting on solids, I’ve finally looked into the topic.

See, here in a America, we interpret the word weaning as taking a child off of breastmilk, but baby led weaning is an English term. In their sense, baby led weaning means introducing foods to a baby with their lead. Breastmilk or formula still provides the child’s nutrition for the first year of their life.

As I looked more and more into the concept, I came across picture after picture of babies grasping carrot spears, gnawing broccoli florets, clutching chicken fingers… It was enough to give me a heart attack. I’m already a typical paranoid first-time mom. I see everything as a danger, so the first thought that popped into my head was, “That baby is going to choke!” Well, obviously I’m not alone in my choking fear. Article after article described how a child is going to gag, it looks that they are choking, but choking and gagging are two different things.

A baby’s gag reflex is located higher up in the mouth to help prevent a child from choking (however, it can still happen). As a child gets older, the gag reflex moves down the throat. The location of the gag reflex is what causes a child to gag while they are learning to maneuver food around their mouth. Usually, when a baby is just gagging, there is noise being made, maybe even coughing. I came across a YouTube video that shows what a gagging episode would look like. Warning, it still looks pretty terrifying.

In instances like this I would have to remember not to grab the baby and start slapping her back. Doing that could actually make her choke.

None of this information made me feel any less paranoid, but it did make me a little interested in the concept.

Is this something the Princess should try? I mean, eventually, she is going to have to eat real food anyways? Don’t get me wrong, she loves her baby food.

I’m not saying I’m going to try it tomorrow, but I’m definitely thinking about eventually giving it a shot. I’m sure you will hear plenty about our endeavor.
